New York Style Crumb Cake Recipe

 New York Style Crumb Cake



Make the topping first:

1.5 sticks melted butter

1/2 cup brown sugar 

1/2 cup granulated sugar

1/2 tsp sea salt 

2 tsp cinnamon. 

2 cups cake flour

Stir to combine and then chill for 20 min.

Meanwhile, make batter…

In food processor, combine:

1 3/4 cup cake flour

3/4 cup granulated sugar 

1 Tblsp cornstarch 

1/2 tsp baking soda 

1/2 tsp sea salt 

1 1/4 sticks cold butter, cut in pieces.

Use chop function on food processor to combine. It will look like sand. Next, add:

1/2 cup sour cream

1/4 cup heavy whipping cream 

1/4 cup canola oil

2 whole eggs 

1 egg yolk

Use chop function on food processor to combine. There is no need to overmix, it will look a bit lumpy and that’s okay! 

Spread batter into 9x13 dish that has been coated with nonstick spray. Retrieve topping dough from fridge and use hands to distribute it in chunks on top of the batter. Press down slightly into the batter. Bake at 350° for about 30-40 min or until center has internal temp of 195°-205°F. 

Remove from oven and allow to cool for at least 20 min. Add sifted powdered sugar to the top.
